I've got a long line of messages from today yet to be read, so forgive
me if this has been answered.

Weasleys' is appropriate for the possessive case -- the Weasleys' car;
the Weasleys' home (but Ron Weasley's wand)
Weasleys is plural -- the Weasleys arrived at King's Cross at 3:00

Hope that helps Simon!
