My thoughts on the following:

I think that it's just one of the sequences of the many that it takes
for the boys to get to Hogwarts. In the book they arrive at night I
believe or at
least around dusk.... so they may show a few more flying car scenes
in the
movie.

I agree about Prof. Binns. I don't think we'll get to "see" this
character:-(
Although, from a film making stand point, it makes sense to not have
to cast another teacher, the audience who is familiar with the movie
version
of the Harry Potter series, will be better able to identify
McGonagall as
she is familiar from the last film.
As for the rest of us, who have read the books, maybe they'll have
filmed something that got cut and include it in the DVD... um wait,
better
not go there, eh? (ducking tomatoes)

I don't think it's a petrified guy, I think it's either Crabe or
Goyle being dragged away into the closet for their clothes.
