<g>  JKR checked over the scripts to make sure they didn't contradict 
any facts that are yet unrevealed to us mere mortals.  It seems safe 
to conclude that if there is significance to Harry's eyes, it doesn't 
lie in their green color.

As for why certain fans <blushes> obsess over seemingly irrelevant 
details such as the preternatural neatness of DR's hair or common 
color of his eyes, of course it is true that an actor's ACTING 
ability is far more important.  I can speak only for myself, but 
suspect that I am not the only one who finds Harry's hair and eyes 
symbolic of things that do matter:  he is flawed (messy hair), 
ordinary (ditto), and also, paradoxically, unusual (brilliant green 
eyes).

Or then again, it might be a simple matter of overidentification.
