How "true" does Cuaron have to be?

Yes (grumble). >:-/

The scene as shown in the movie was good, but the entire 
(aka "extended") scene as shown on the DVD extras was incredible.

So much was told so brilliantly in that extra minute or two that it 
should have been left intact...for it establishes the firey, abrasive 
dynamic between Snape and Harry that continues throughout the books.
