It seems that they are currently shooting around Hagrid's hut, so I'm
thinking maybe, just maybe, they are wearing their new uniforms for
the Care of Magical Creatures class--similar to how they had
different uniforms for Herbology in CoS. The students would be
outside and it could get rather messy (especially with Hagrid as the
instructor!), so I think a CoMC uniform might be in order.
OrigamiWizard, who doesn't mind the PoA wardrobe changes much, but
would be thoroughly unhappy with major GoF cast changes!
