Didn't she just write in OOTP that he was a seeker, in the part 
where harry went into Snapes pensive (sp) James was playing with the 
snitch? That he had just held on to after catching? Maybe I read it 
wrong.

She wrote him as playing with the Snitch, but not that he was a Seeker. He could have been playing the Snitch no matter what position--it's an small, compact way to show himself off. (He certainly couldn't carry a Quaffle around for this purpose.)
