I didn't find this illogical, since I assumed Snape was 
teaching them how to identify a possible werewolf 
*before* it changed, or perhaps by its sound, its
effect on the surrounding environment, etc, so one
could avoid confronting it. Once it's in its werewolf 
form *and* in sight, you'd be able to identify it most
easily by the fact that it's the thing trying to rip 
your throat out!
