But it states right there in the book that Ron calls Hermione a
"know-it-all" twice a week.  What's the difference who says it?  Yes, in
the book Ron defends her, but why he does it seems more like only he can
call her names.  I found it very hypocritical of Ron to defend her from
Snape's name-calling, when Ron does it himself.

Personally, I thought it was fitting because Ron, in the book, does call
her a "know-it-all" and at least twice a week.  Here in the movie, he's
just agreeing to what Snape says.
