How about because they've been sitting at the lakeside for a while, and 
that the plant we see Neville pulling out of the water isn't the first? Or 
perhaps because, having spent three years in each others' company, Harry 
knows that Neville has a habit of calling plants "amazing"?

BTW, yes, Harry reads the title from the book's cover during that scene.
