Carol responds:
We did see something of her emotional side after the Yule Ball scene
in GoF. but I agree that they've underplayed it (and played up her
Gryffindor traits, such as changing her slap to a punch when she hits
Draco in PoA). 

I think that leaving out her hexing Ron with canaries is a good move
on the filmmakers' part, assuming that they want the viewers's
sympathies to be with her rather than Won Won.

Carol, who assumes that Ron went to Madam Pomfrey afterward and
wonders why she didn't give him dittany for the scars
