No, Snape's worn the frock coat and trousers from the beginning.  In 
PS/SS he wore a hooded cloak IMO as a misdirection regarding the figure 
in the Dark Forest.  In the subsequent movies he wears a sleeveless, 
hoodless robe instead . . . an academic robe?
