                              More than 60 years after its development, SPAM--short for spiced ham--has become a cultural icon. Some of its fame has come since the early 1990s, from the use of its name as a term for unwanted mass email, but the often-maligned, gelatinous pink meat has a proud history.

                              Inexpensive and convenient, SPAM was developed by the Hormel Food Corporation in 1937 to appeal to Depression-era housewives (SPAM was the first canned meat that didn't require refrigeration). Though rumored to contain less desirable parts of the pig, SPAM contains only pork shoulder, ham, salt, water, sugar, and preservatives. Hormel promoted SPAM in 1940 through what was arguably the world's first radio jingle, and hired the well-known comedy team of George Burns and Gracie Allen to advertise the product on their radio show.

                              World War II made the popular meat an international phenomenon. In its innovative tin, SPAM went into battle with the American troops, and was exported to America's European allies. Soviet Premier Nikita Krushchev credited SPAM with saving Russian troops from starvation.

                              SPAM has remained particularly popular in places that have problems with food distribution, or where meat is scarce or expensive. Hawaiians eat more SPAM per capita than any other Americans, while Alaskans rank second. 



                              SPAM A LA ORANGE 

                              2 (12-ounce) cans SPAM® Lite luncheon meat, cut into julienne strips
                              1 cup sliced mushrooms
                              2 tablespoons butter or margarine
                              1/4 teaspoon salt
                              1/8 teaspoon pepper
                              3 tablespoons brown sugar
                              1 tablespoon cornstarch
                              1/8 teaspoon ginger
                              2/3 cup orange juice
                              1/3 cup orange marmalade
                              1/2 pound baby carrots, cooked
                              1 green pepper, cut in large pieces
                              1 red pepper, cut in large pieces
                              1/4 cup toasted almonds
                              Hot cooked rice 

                              In large skillet, cook SPAM® and mushrooms in butter until lightly browned. Season with salt and pepper. Remove from skillet. In small bowl, combine brown sugar, cornstarch, and ginger. Stir in orange juice and marmalade. Add orange juice mixture to skillet. Bring to a boil, stirring constantly until thickened. Reduce heat to low. Add carrots, meat mixture, and peppers; stir to coat. Cover and simmer 10 minutes. Sprinkle with toasted almonds. Serve over rice. Serves 6 to 8.
