Instant grits is a substitute (though the purists may kill me for 
that). Basically, you cook grits according to the package directions. 
You can eat grits such as you would cream of wheat. You can it in the 
place of rice. Mind you, grits is soft and creamy, so there isn't much 
in the way of texture. But you can certainly mix cheese into it.

Most definitely, but I would have hated to see how my teacher would 
have gone about coloring the yolks of fried eggs....thankfully that 
trauma was avoided.

"Civil War"...there was nothing "civil" about the War Between the 
States (AKA War of Northern Aggression) <wink>
