For all I know I should be using another kind of tea altogether. But
the friend who gave me the recipe for chai said to use Darjeeling,
and it does taste just like the stuff I got on the street in India
(though if you really want the full experience you have to drink it
out of barely-fired terra cotta cups that release a slight clayey
taste along with the spices), so I'm not messing with it. In fact,
now I'm wondering if taking the caffeine out will ruin the taste.
