Don't have a clue, but I am curious...

Just when, where, and how did you come across the expression 'jammy cow'?

Sounds like a cow who wears 'jammies' (pajamas).

?? "Luck as a jammy cow."

?? "It was a good day until I came across that jammy cow."

?? "A jammy cow in the hand is worth two in the bush."

?? "Well, I'll be jammmy cowed, if it isn't the Pope."

?? "I wouldn't say she was a fox, but she was a right nice jammy cow."

?? "We had such a wild session of jammy cow last night that we
actually broke the bed."

Give us a clue ;).
