I'm not Kneasy of course, but I can answer your question.  Zest is the
yellow color on the lemon ( the same it true for orange, lime ext...) and
is a gives off a very intence flavor.  Almost like the natural version of 
extracts.  If you've ever cut open a lemon (orange...) you will see
that the color is only in a thin layer on the very out side.  They have 
a special tool to get the zest off a fruit, but if you take a seraded knife
and carefully scrape the blade on the fruit you can remove the zest.
But when doing this in any form you MUST be careful not to remove 
so much zest that you also remove the white (pith)!  It is bitter, and 
will not give you as good of a result.
