Well, this is the recipe we had to follow to enter the Hardwick 
Show: 

Victoria Sandwich Cake with raspberry jam filling, caster sugar 
topping

6 ozs butter
6ozs caster sugar
6 ozs self-raising flour
3 eggs (beaten) 

Grease and line 2 sponge tins Beat the butter and sugar until light 
and fluffy, whisk eggs well and beat into the mixture adding a 
little flour at any sign of curdling. Gently fold in the flour to 
soft consistency; add a little water if necessary. Divide the 
mixture equally between the 2 sponge tins and cook for 18 - 25 
minutes at 350 - 375F, gas mark 4 – 5

If I hadn't been constrained by the show requirements I'd have added 
a little vanilla essence to the sponge.

But ... I won :-)

The three things I entered: victoria sandwich, bread, and sloe gin 
all won first place in their class. Next year I'm going to do so 
much baking that I'll try to win the cup for most points won in 
classes in the baking category.
