Here's the recipe for Grilled Trout Italiano
 
4 Rainbow Trout, boned with head removed
2 T.Dry White Wine
2 garlic cloves, minces
1 T.Fresh Parley, chopped
1 tsp. fresh oregano, chopped
1/4 tsp. salt
1/8 tsp. gorund white pepper
2 T. Olive Oil
 
Combine all ingredients (except trout and oil) to form marinande.   Gradually 
whisk in oil.  Pul marianade over trout and marinate for about 30  minutes in 
refrigerator.  (In place of marinade, 1/3 cup Italian or  vinaigrette may be 
used.) Place trout on oiled grill and cook for about 3-4  minutes per side, 
gently turning once.  Serve immediately.

Stuffed Trout with Bacon
 
1 Trout, cleaned
6 bacon strips
2 T.Onion, chopped
2 T. celery, chopped
1/4 lb. butter
1/2 T. Thyme
1/2 T. Garlic Power
     Salt and Pepper to taste
1 egg
1/4 cup milk
1 1/2 cups bread cubes
 
Fry 2 bacon strips until crisp. Saute onion and celery in butter until  
clear.  Add spices and crumbled bacon.  In small bowl, beat egg and  milk together 
and stir in bread cubes: add to bacon mixture to make stuffing and  brown.  
Stuff trout and wrap remaining bacon strips around trout.   Bake at 325 degrees 
for 1 hour.
 
Enjoy....**Always remember to preheat and oven 10 minutes before  baking***
