Carol notes:
When I was a newlywed (ages ago), my (ex-)husband used to catch trout
and expect me to cook them. I used a very easy recipe that I created
myself. After removing the head, entrails and bones (the skeleton
lifts out easily) and washing the fillets thoroughly, I patted them
dry and shook them in a bag of flour lightly seasoned with salt, black
pepper, and thyme. Then I pan-fried them in a teeny bit of cooking oil
till they were lightly browned on both sides and served them. My
husband and I sprinkled on lemon pepper at the table.

Not a gourmet recipe like the ones Mary provided, but tasty and so
easy that a twenty-year-old bride with limited cooking experience (me
at the time) could do it. But if you're a good cook, you may want to
use Mary's recipes instead.

BTW, I understand that trout is an English speciality and I'm
American. My view was, if you don't have a recipe, improvise! I just
adapted the way I cooked chicken to suit fish--less time, more thyme.
(Bad pun. Sorry.)
