Shepherd's Pie is a resulting cheap way to use left-over leg-of-lamb (or 
other large lamb roast meat).  You take the leftover veggies such as 
roasted onions and carrots and green peas and tiny cubes of the roast 
meat and brown it all up in a hot cast-iron skillet. Pour over that the 
leftover gravy and top it all off with the leftover mashed potatoes and 
bake until the mashed potatoes are crusty-brown.

What does this have to do with Cottage Pie, you may ask.  Well, cottage 
pie is exactly the same thing made with leftover roast-beast.

In these days, we "enjoy" the convenience of "almost instant" food, and 
we complain if anything takes much more than 30 minutes to an hour to 
prepare. With that in mind, most modern recipes have been adapted for 
this recipe which now calls for ground beef.  It ain't the same.
