stucco as "fine plaster used for coating wall surfaces or moulding 
into architectural decorations."

Is the US definition different to mine? Because even if houses are 
wooden-framed, I cannot see how the wall between the frames 
can be made of a coating plaster.

Stucco is basically cement and usually spread over a wired or other rough,
porous surface. Usually two layers are applied for complete coverage and it
can be applied over a minimal wood framing, when it hardens it's very strong
and basically makes a cement structure when cured.
