Didn't Barty Crouch, while confessing, say something like, "I had to
learn how the real Moody acted so no one would suspect." If he *hadn't*
taught the kids curses, or told them to become aurors, or abused the
Slytherins (i.e. Draco Malfoy) he wouldn't seem like the "real" Moody,
and someone -- namely Dumbledore -- would have gotten suspicious.

As for why Moody/Crouch had to go through the whole Triwizard thing just
so Harry could touch the trophy, perhaps Voldemort needed time to get
stronger, so he couldn't bring Harry to the graveyard and perform the
ritual right away. Also, if Harry *did* get killed in the tournament,
he would be out of the way and Voldemort would still be able to use the
blood of another enemy -- i.e. Dumbledore, even the Weasleys, maybe the
Longbottoms -- and he'd rise again either way.
