I don't deny that V is a publicity-seeking psychopath; however, it 
seems that V needed Harry's blood *in particular* to nullify the 
protection provided by his mother's death.  In Book 1 it was the 
residue of that protection which caused Quirrell's intense pain when 
he touched Harry.  Once that protection was gone, Voldemort could 
touch Harry, and by implication, kill him.  

However, Dumbledore's reaction to this information was an immediate 
look of triumph.  Apparently, more than one barrier was overcome when 
V shared Harry's blood.  I expect that JKR will, in her own time, let 
us know what this was.
