We have to remember that Harry will have seen most of the teachers. I would
assume that most of the teachers make the effort to attend the opening feast
of the year and that most will eat in hall at some time during the year. Due
to this Harry probably knows how many teachers there are.

Are you trying to suggest that Hermione fell asleep during a lesson?

Maybe it was decided that there was no point in teaching about his past as
it would not be important.
