Cedric is the first genuine death in the unfolding narrative - this makes it
easier to set up the dramatic conflicts which will, in the later books, kill
off some of the more important characters (just as the first death in Hamlet
is garrulous ineffective Polonius, or the first death in Lear is a nameless
servant defending Gloucester).
