I believe that they are spirits.  They can change
appearance and shape so quickly.  Also, they can be
destroyed without -it appears- any mess.

You forget that Blast-ended Skrewts are an entirely
new breed of creature. Hagrid just bred them in time
for Harry's fourth year. (see the chapter Rita
Skeeter's Scoop in GoF) Therefore this new breed of
creature wouldn't be in Harry's edition of Fantastic
Beasts.
