As Amy Z said, because I'm morbid? Eh, I just expect a lot of people to die 
in the future books, what with Voldie's Rising. And I can easily see most of 
the teachers going in defense of the students (assuming that Hogwarts stays 
open for the next three books). But you're right, she could just retire and 
live out the rest of her days happily gardening.

As for so many people expecting it...well, I guess what matters is what JKR 
thinks, if she thinks people don't expect it. I believe at this point, 
Neville is the least-likely Gryffindor to become a Hogwarts Professor. 
That's just my humble opinion.
