Wouldn't that apply to British muggles too though? (Well those that don't exercise and there are apparently a lot of us.) Yet I know a lot of people at my school who eat rather a lot, do very little exercise and yet are still remarkably healthy and thin, or else look perfectly healthy and are around average weight.
What would be the difference with Wizards/Witches? They are still human and their bodies work in the same way (or I presume they do or they wouldn't be called humans).
And just to antagonise you Americans a bit, I wouldn't exactly say that American food is "light" from the stuff I saw when I was over there a couple of years ago (unless you've got rid off all the fast food places and restaurants we visited ;) )
