I think you've hit the nail on the head... Snape bust his
such-and-such off for the cause, and it all gets eclipsed then V
gets defeated by a baby in a fluke accident. (I think Snape
must resent it as much as V does.) And I think the change at the end
of GoF is that S recognizes that, though he still doesn't regard Harry
as a sterling kid, he at least repects his ability to protect himself
from V in his own right.

Hmmm... Maybe he knew Quirrell was on his way, and so Snape went out
to demand to Hagrid that he tell him how to get past Fluffy. (I have
this image of S clutching Hagrid's collar and saying "Listen man, I
tell you Quirrell has gone after the Stone and that idiot Potter
thinks he can stop him -- Now tell me how to get past Fluffy so I can
stop Quirrell and save that git with the glasses, or I'll go into the
Forbidden Forest and molest the Whangdoodles!")
