Certainly, the Lexicon is a great tool for keeping track of details. I suspect that
they have virtually re-created some of her lists of notes about characters,
creatures, etc.!
As evidence that she's out there listening, we do have the instructions about
pronouncing "Hermione" in GoF. I seem to recall an interview in which she said
that this pronunciation problem hadn't occurred to her until it was brought to
her attention.
As far as plot threads -- when she discovered the gaping plot hole in the midst of
GoF, that probably also caused problems with the outlines for the last 3 books,
and a lot of reshuffling and rethinking. In the middle of the middle book, she was
faced with knots and tangles in her threads! We have seen that the outlines are
flexible enough to cause Rita and the Weasley cousin (who of course might not
have been named Weasley) to move around. Yet the final chapter of Book 7 is
written and so everything must work towards that outcome. I would be very
surprised if her publisher, by this point, hadn't insisted that she get whatever
help she needs -- transcription, online research elves, whatever -- to get these
things written.
