There's a difference between a voice breaking a few times in one conversation or another (which would not be a problem), and it being completely changed. Again, if, at the beginning of CoS Harry or Ron has a smooth deep voice, yet in some end scenes they still have high, childlike voices, that would, indeed have a problem. And yes, they can change that quickly. I overheard an interview with Hanson, for example, and the kids were saying that in the course of recording one album, Taylor Hanson's voice went from being completely high to having completely changed. Another sort of similar example is of the kid in Almost Famous who grew six inches during filming. One might think that it wouldn't be a big deal for a teenage kid to show evidence of having grown during the course of the movie, but it affected the character dynamics (one character was supposed to much bigger than the kid).
