My latest theory:  the map only shows people who are relevant to the person 
who's viewing it. I believe it's a highly intelligent map -- remember, when 
Harry first got it, it showed Map Harry tapping the witch and saying the 
secret password. 

It's not a very big map -- and it would have to be huge in order to show 
everyone at Hogwarts -- I estimate there are about 300 people. 

The map knows who's looking at it and what they want or need to know. Just 
don't ask me how. ;-)
