I was wondering about that too. Because how is Hedwig able to find 
Sirius when he is in hiding?

Well, maybe this is just animal instinct? I know my cats feel when I'm 
in a bad mood. I think animals are very sensitive, certainly 
hippogriffs, which have to be treated with respect. Then they have to be 
sensitive to feel that respect. I think that's why it seems that the 
understand human speech.
