I think Snape's starting at Malfoy's name is a red herring that JKR
has planted (mixed metaphors but you get the idea).  We're supposed
to think that it's Malfoy's name that Snape is reacting to but the
fact that Harry can name them for some reason.  But we'll all be
watching the Malfoy's all the closer now.
