It's wolfsbane that keeps Lupin from transforming. Lupin was lowsy at 
potions - he knows it exists, and Snape brews it for him. It might be, 
however, that the sugar making it useless was a lie - Snape's way of 
revenging the horror back at his school-days, I guess. Can't poison a 
werewolf - not to mention that AD wouldn't like it. Sirius might know the 
truth - (more reason for him to be angry at Snape).
