While I agree that Lupin is being humble, and isnt
inexperienced I believe I have stumbled on a simpler
answer to this question.  In chapter ten of PoA Harry
asks Lupin to teach him how to repel the dementors. 
Lupin says, There are  certain defenses one can
use
So, perhaps Dumbledore and Lupin were not casting the
patronus spell.  Weve seen before that there can be
more than one way to accomplish a task.  Maybe Lupin
choose to teach Harry the patronus because that would
be the easiest for him to learn.
