I really like this question.  Very inventive, Megan.

Perhaps the Mirror has a limitation we haven't been told about.  
Maybe it can only show something that is possible in the future.  It 
cannot show something that is impossible.  

So it is possible for Ron to be head boy someday, and it is possible 
for Harry to learn what deceased members of his family look like 
(indeed, he has pictures of his parents).  But it will never be 
possible for Harry to interact with his family, so he can't see that 
scenario in the mirror.

Just a theory.
