Ah, that depends on magical hair, doesn't it? As a mere teacher,
possibly with House sympathies, Dumbledore could vaingloriously
affect a combination of red and gold (=auburn). Now, as headmaster,
he is above the petty fray, and wears his hair white.
Its natural colour could easily be green - remember, he can speak
Mermish.
Or it could just be that hair colour, like wizards, is long lived.
