It says in the first chapter of PoA that
<"his(Harry)teachers at Hogwarts had given him a lot of holiday
work.">
I think it's just preparing, really-for lessons to come. In the same
chapter it says:
<"One of the essays, a particularly nasy one on shrinking potions,
was for Harry's least favourite teacher, Professor Snape.">
Then in a later chapter, Boggart in the wardrobe, it clearly states:
<"They were making a new potion today, A Shrinking Solution.">
So, I know the teachers give homework over the holidays. So maybe the
students just have a break the last week, then are given their
holiday work just before they leave? Or are given it right after the
exams, and chose to hold it off until they get home?
