I think it's safe to say that he probably wasn't wearing the turban in the
book. However, I wouldn't say that Quirrel wearing it in the movie is
necessarily an indication that the movie-makers aren't paying attention to
detail. Quirrel's turban is his identifying characteristic. It makes sense,
visually speaking, to have him wearing it the first time we see him in the
Leaky Cauldron. When we see him again in the castle, the connection and
recognition will be immediate and clear.
If the movie-makers followed the book in this instance, they would run the
risk of people not immediately connecting the "crazy turban-wearing teacher"
with bare-headed Quirrel in the pub. This is, of course, assuming that the
people in the audience haven't read the book several million times already. ;)
