I think Snape simply has too much professional pride to do either
of those things. Refusing to make it might imply that this
tricky, complicated potion was too difficult for him;
deliberately screwing up would look like he failed. Anyway,
Snape has a certain underlying integrity and his profession as a
potions master is one place it shows up most strongly.
I wonder if, perhaps, this is the one aspect of his life that he
never =has= screwed up.
