I remember talk-show hostess, Rosie O'Donnell, saying that she wrote 
Molly Weasley's signature in the US ed of GoF.

Rowling probably did some of the signatures herself or got other 
people to write them. The Dumbledore signatures in FB and QTA were 
most likely done with a pen requiring a nib, probably a dip pen, and 
probably by someone who doesn't write with that kind of implement from 
the uneveness of the penmanship. But it does add character, rather 
than implying poor penmanship.
