I wonder just what *your* canon is for that, other than the fact that he 
obviously got Harry to Privet Drive in one piece. 

The only baby we've seen Hagrid look after successfully is Norbert. He 
doesn't know what to feed the Skrewts, who end up eating each other and the 
Flobber Worms die from a surfeit of lettuce, IIRC.

He attempts to feed human children on stoat sandwiches and on rock cakes and 
toffee that are nearly impossible to eat.

If Snape had turned up cradling Harry, hard as it is to imagine, we would 
have had just as much canon to indicate his mastery of infant-care. In other 
words, zero.

I think you misjudge McGonagall, BTW. I think she's quite a softie at heart.
