Me:

I've always thought that this was used as an opportunity to show
Snapes relationship with Filch.
Snape obviously trusts him (well enough to ask him for help with a
injured leg)

I've also thought that the reason he didn't want to go to Pomfrey is
because he wanted Quirrell to think that he (Snape) was working on
his own (maybe for his own goals) and not necessarily with
Dumbledore.

The thing that strikes me at the end of PS is that although
Voldermort knows that Snape was trying to stop Quirrell he doesn't
have proof that Snape wasn't just working as a 'free agent'.
