I think that the reason Harry was so affected by the boggart/dementor was because his fear of the dementor was so great, as well as fresh in his mind. If you'll recall, in book 4, he meets a boggart in the maze (in dementor form) and is unaffected. I think it has something to do with the level of experience the wizard has.
