According to Stephen Fry - illustrious reader of my HP canon - its a three syllable word.  Him being British public school probably got it right.

Do invest in Fry - no-one does it better!

  I recently wrote a filk in which I assumed that the surname of 
  Florean Fortescue (he of the ice cream parlor in PoA, Chap. 4) was a 
  three-syllable word (For-tes-cue). It now occurs to me that perhaps 
  it is a two-syllable word (For-tesk). Could someone enlighten me?
