Also, keep in mind that Quirrell was NOT a DE in the bad old days.
In the graveyard scene of GoF, LV tells the the DE's, "Then...four
years ago...the means for my return seemed assured. A wizard--young,
foolish, and gullible--wandered across my path in the forest I had
made my home. Oh, he seemed the very chance I had been dreaming
of...for he was a teacher at Dumbledore's school..." So, Quirrell
was a very recent convert to the cause-- he joined after the last DE
company picnic.

So, unless Quirrell said to Snape, "Look, I'm not stealing the stone
for myself, I'm stealing it for our beloved Dark Lord. Let me just
take off my turban and show you," Snape could resonably claim that he
thought Quirrell was trying to steal it for himself. Says Snape to
Voldemort, "I'm so sorry I ruined your plan, my Lord, but if I had
only known..."

Similarly, he can make a similar excuse for saving Harry's life on
the cursed broomstick. "I thought you might prefer to kill him
yourself, my Lord, so I couldn't let that loser, Quirrell, kill him
before you had the chance."
