It's possible that he was trying to lead another person away from LV.  
Afterall, he knew first hand what could happen to the weak ones who joined 
with LV, and Quirrel was somewhat a weak character.  For example when ex-drug 
users try to get other drug users to stay away from drugs.  So Snape is doing 
what he can to get Quirrel away from LV before there are drastic 
consequences.
