I'm not sure if I agree with you 100% there, although it's definitely one way to look at it (and terribly humorous in a way... Snape having to suffer through teaching idiot kids to brew potions.) It's been reiterated time and again that the safest place in the world is Hogwarts, so Snape could be sheltered, somewhat, from any DE's who suspect he's not wholly on their side. Additionally, because villains are a cowardly and superstitious lot, there *has* to be enough suspicion circling out there in the DE ranks to make a spy vulnerable if he's seen galloping back and forth between DE conclaves and Hogwarts without the very good excuse of being a teacher there. Being a teacher, as obnoxious as it apparently is, gives Snape the opportunity to perform his role as spy more effectively -- although I'm sure Voldy will want him to function as an in-man at Hogwarts as soon as he gets in contact with him.
Of course, I do believe that Snape will do just as you said as soon as Voldy is gone -- probably take a long vacation in an adults-only wizard community, or become a hermit. Then again... the little tykes *do* grow on you, don't they?
