They had to stay unseen, and not change events that had already
happened. If they did, they would have destroyed the whole
time-space-logic thing and probably ceased to exist or something ^_^
The only way they could have captured Scabbers was to wait until he
escaped into the Forbidden Forest and tried to catch him then, an almost
impossible task at the best of times, even more so in the middle of the
night. Alerting the teachers wasn't an option, because the teachers were
not alerted the first time around. The only reason Harry was able to
cast the Patronus to save everyone was that he had already experienced
it the first time round, so it HAD to happen. Buckbeak had also been
saved the first time around (although they didn't know it yet) so they
were able to do that too. I'm of the school of thought that even if they
*tried* to change the past, they just physically wouldn't be able to. No
way, no how, not gonna happen.
